Creamy Frozen Cranberry Salad Bites

Description

Sweet, creamy, refreshing, frozen alternative to traditional cranberry sauce with pineapple.


Ingredients

Scale
  • 3 oz softened Cream cheese
  • 2 tbsp Mayonnaise
  • 2 -3 tbsp. Sugar
  • 1/2 pint Heavy whipping cream
  • 2/3 cup Pineapple juice
  • 8 oz. drained Crushed pineapple
  • 1 can Cranberry sauce
  • 1/2 cup chopped Pecans


Instructions

  1. Drain pineapple.
  2. If using muffin liners to serve, place in the muffin tin.
  3. Blend cream cheese, mayonnaise, cream, and sugar together until completely blended.
  4. Add pineapple, cranberry sauce, and pecans and pulse until desired texture is achieved - longer for a complete blend, shorter for discernable cranberry, pecan, and pineapple textures.
  5. Pour into muffin liners, regular and mini-sized
