Description

Kelewele is a spicy plantain snacking food from Ghana.


Ingredients

Scale
  • 6 ripe Plantains (gold with a few brown spots)
  • 1/2 cup Water
  • 1 Onion
  • 1 Tbsp Cayenne pepper
  • 1 fist sized root of Ginger
  • 1 tsp Salt


Instructions

  1. Peel the plantains, then slice lengthwise (top to bottom), then quarter but cutting width wise. Chop the four quarters into thumbnail sized pieces.
  2. Puree the batter ingredients (water through ginger). Adjust to taste.
  3. Toss the plantain sections in the batter.
  4. Follow directions for your deep fat fryer (or air fryer) OR add 1 inch of oil to a frying pan.
  5. Heat oil to 360 degrees, or if you don’t have a thermometer, until there are slight ripples across the top of the oil.
  6. Fry plantains until crispy.
