Description
Kelewele is a spicy plantain snacking food from Ghana.
Ingredients
- 6 ripe Plantains (gold with a few brown spots)
- 1/2 cup Water
- 1 Onion
- 1 Tbsp Cayenne pepper
- 1 fist sized root of Ginger
- 1 tsp Salt
Instructions
- Peel the plantains, then slice lengthwise (top to bottom), then quarter but cutting width wise. Chop the four quarters into thumbnail sized pieces.
- Puree the batter ingredients (water through ginger). Adjust to taste.
- Toss the plantain sections in the batter.
- Follow directions for your deep fat fryer (or air fryer) OR add 1 inch of oil to a frying pan.
- Heat oil to 360 degrees, or if you don’t have a thermometer, until there are slight ripples across the top of the oil.
- Fry plantains until crispy.
