Description
Best Shinwari Karahi, a delicious lamb dish with fresh tomatoes, garlic, and ginger from the Shinwari tribe in Northern Pakistan (and Afghanistan).
Ingredients
- 2 lbs Lamb meat with some fat
- Salt and roughly ground black pepper to taste
- 1 cup Oil, ghee, tallow
- 2 -3 Tomatoes chopped (optional)
- Green chillies/ pepper (just make a slit length-wise)
- 2 tbsp Ginger garlic paste
Instructions
- Put the oil in a pan. When it’s hot (not too hot), add the ginger garlic paste, and sauté until the aroma comes out but the color doesn’t change.
- Add the meat, sauté well for 5/7 minutes, add a couple of green chilies, salt, and a big pinch of ground pepper.
- Lower the heat and cover it.
- At this point you can add the tomatoes.
- Let it simmer, checking occasionally.
- Once the meat starts getting soft, turn the heat high and sauté until the oil is separated, throw in a couple more peppers, and a pinch of black pepper
- Leave it on low heat to sizzle until you get the table ready.
- Make a salad of cut onions drenched with lemon juice and some salt and cut green peppers/ chilies.
- Eat with a fresh clay hot oven nan bread or fresh roti.
- Consider making lassi by mixing or blending homemade yogurt with water and some salt.

Salad, Naan bread, lassi (yogurt drink), green chopped coriander, and hot green chopped chilies can be used as a garnish.
