Pollo Frito: Puerto Rican Fried Chicken (Without Flour)

This is most juicy, tender, and flavorful fried chicken recipe! Although this easy fried chicken recipe uses NO flour (or flour substitutes), NO eggs, and NO buttermilk, you won’t miss a single one of those ingredients!

Basic Ingredients

– 12 chicken drumsticks or meaty chicken pieces – 1 tbsp adobo – 1⁄4 tsp pepper – 1⁄4 tsp salt – 2 tbsp minced garlic – 1⁄4 cup olive oil – 1⁄4 cup cider vinegar – 2 cups canola oil (for frying)

Is it really possible to make fried chicken without flour?

It really is!!! Not only that, but you won’t miss it with this Pollo Frito recipe!!!! The crispy, golden skin and flavorful & moist meat will satisfy that fried chicken urge!

What’s the secret to flavorful fried chicken?

The marinade of oil, vinegar, Goya Adobo seasoning, and garlic: 1) The marinade infuses flavor into the chicken. 2) The heavy salt content in the marinade (from the Adobo) acts as a brine.

Can you bake Pollo Frito instead of frying?

Yes, BUT – baked will never be the same as fried. But, it's still delicious.  – Keep the skin on during baking. – Bake on a sheet pan at 425 for 30 minutes, then flip and bake another 20 minutes
