Super simple creamy layered ginger mandarin dessert. Just 3 ingredients with no bake time, this is a go-to for a quick and easy dessert for a crowd! Top with a beautiful garnish in under a minute.
16ozginger nuts or gingersnap cookies(probably will have a few leftover)
2cupsheavy cream(1 pint or 473 mL)
215 ozcans of mandarin orangesdrained, preserve some syrup

Make The Recipe
In a stand mixer, whip the heavy cream until it forms soft peaks. Set aside. If desired, add 1-2 tablespoon of powdered sugar and/or 1 teaspoon of vanilla. I prefer it plain, but everyone has different tastes :-)
Use your hands to break up a few cookies and place a single layer of ginger nuts (or gingersnaps) at the base of a pie pan, casserole dish, trifle bowl, or individual serving glasses.
Add a layer of mandarin oranges on top of the cookies (optional: pour some of the syrup from the can over the oranges). If you are using a see through vessel, make sure you put some mandarin slices right up against the edge so you can see them through the whipped cream.
Put a few spoonfuls of cream over the mandarin slices and smooth over.
Continue adding layers until you reach the top of the dish.
Leave in the fridge until the cookies are softened from the oranges and whipped cream.
Optional Garnish: Sprinkle cookie crumbs, arrange a few orange slices on the top, and place mint leaves around the oranges for decoration.
