Kelewele

Kelewele is a spicy plantain snacking food from Ghana.

Ingredients
  

  • 6 ripe Plantains (gold with a few brown spots)
  • 1/2 cup Water
  • 1 Onion
  • 1 tablespoon Cayenne pepper
  • 1 fist sized root of Ginger
  • 1 teaspoon Salt

Instructions
 

  • Peel the plantains, then slice lengthwise (top to bottom), then quarter but cutting width wise. Chop the four quarters into thumbnail sized pieces.
  • Puree the batter ingredients (water through ginger). Adjust to taste.
  • Toss the plantain sections in the batter.
  • Follow directions for your deep fat fryer (or air fryer) OR add 1 inch of oil to a frying pan.
  • Heat oil to 360 degrees, or if you don’t have a thermometer, until there are slight ripples across the top of the oil.
  • Fry plantains until crispy.
